What is Mediterranean Quinoa Salad?

Mediterranean quinoa salad is a vibrant grain salad inspired by the fresh, herb-forward flavors of Mediterranean cuisine. Fluffy quinoa is tossed with crisp vegetables, briny olives, citrus, and herbs to create a refreshing dish that’s both satisfying and wholesome.

One of the reasons Mediterranean quinoa salad is so popular is its versatility. It can be served chilled or at room temperature, works beautifully as a side dish or light lunch, and easily pairs with grilled meats, seafood, or plant-based proteins for a complete meal.

Ingredients You Need for Mediterranean Quinoa Salad

  • Quinoa – Used as a grain, quinoa is actually a seed! Simple to make and loaded with fiber and protein, it’s a staple in our diets and used in a wide variety of recipes, including One Pot Mexican Quinoa, Vegan Roasted Eggplant Salad, and this Mediterranean Quinoa Salad Recipe.
  • Chickpeas – A type of legume, chickpeas are super high in fiber and protein and provide a poppable texture we love.
  • English Cucumbers – We prefer to use English cucumbers over other varieties because they have a slightly sweeter taste.
  • White Vinegar – Used to slightly pickle the onions, creating a tangy taste.
  • Red Onions – We include these to add just a hint of heat to this recipe. Just be sure to slice them small! Or, if you prefer, swap them out with yellow or white onions or even shallots or green onions instead.
  • Kalamata Olives – Tart and salty, olives help balance out the sweeter flavor of the rest of the ingredients while adding a great source of healthy fats!
  • Red Bell Peppers – Used to add extra crunch and a pop of color. Feel free to mix and match any peppers you have on hand. Just note that green peppers will be slightly less sweet than yellow, orange, and red peppers.
  • Tomatoes – Used to add moisture and texture to the salad. We like on-the-vine tomatoes for bold flavor, but cherry or grape tomatoes work well, too.
  • Fresh Herbs – We love to include a mixture of cilantro and parsley for a hint of freshness.
  • Lemon Zest & Lime Juice – These help cut through the heaviness of the oil and fats and add a refreshing light flavor to this Mediterranean quinoa salad.
  • Extra Virgin Olive Oil – Used to coat the ingredients, acting as a dressing and bringing an element of savory flavor and healthy fats.

How to Make Mediterranean Salad with Quinoa

  1. Marinate the Red Onion. To begin, completely submerge the diced red onion in vinegar in a jar or bowl with the vinegar. Set it aside.
  2. Prepare the Quinoa. Rinse the quinoa thoroughly to remove any bitterness before cooking it according to the package directions. Once the germ spirals are visible and the quinoa is tender, remove it from the heat and allow it to rest briefly. Then, fluff it with a fork so the grains stay light instead of clumping together. Let it cool before combining with the other ingredients.
  3. Combine the Salad. Add all of the ingredients, including the red onions and quinoa, to a large bowl. Toss to combine. Transfer the salad to the fridge to chill or serve immediately on its own or with dishes like salmon bites, grilled chicken, lamb burgers, or any proteins at a BBQ!

Variations on Quinoa Mediterranean Salad

  • Greek-style – Add crumbled feta cheese and extra kalamata olives for a classic Greek-inspired flavor. Or use dairy-free feta to keep it vegan.
  • High-protein – Toss in grilled chicken, shrimp, or salmon to transform this salad into a hearty main course.
  • Grain swap – Replace some of all of the quinoa with cooked farro, couscous, or bulgur for a slightly different texture and flavor.
  • Extra herbs – Add fresh mint or basil along with the parsley for an even brighter, garden-fresh taste.
  • Spiciness – Stir in a pinch of crushed red pepper flakes or finely chopped jalapeño for subtle heat.
  • Creaminess – Mix in diced avocado right before serving for a silky contrast to the crisp vegetables.
  • Dressing – Try adding red wine vinegar for a touch of tanginess or mix in some Dijon mustard. Or, get creative and whip up your own vinaigrette.

Can I Store Leftovers?

This salad holds up well for leftovers, though the vegetables may soften slightly as they sit.

Store Mediterranean salad with quinoa in an airtight container in the refrigerator for up to 4 days.

We don’t recommend freezing since the fresh vegetables will lose their texture when thawed.

If you’re making it ahead of time, prepare the salad and add the herbs right before serving so everything stays bright and fresh!

Quinoa Mediterranean Salad Common Questions

Is Mediterranean quinoa salad served warm or cold?

It’s most often served chilled or at room temperature. Cooling the quinoa before mixing helps keep the vegetables crisp and prevents the salad from becoming soggy.

Is Mediterranean quinoa salad gluten-free?

Yes! Quinoa is naturally gluten-free, which makes this salad a great option for people avoiding gluten.

Why is my quinoa mushy?

Quinoa can become mushy if too much water is used or if it cooks for too long. Using the correct water ratio and letting it rest before fluffing helps keep the grains light.

How do you keep quinoa salad from getting soggy?

Make sure the quinoa cools completely before mixing it with the vegetables. It also helps to pat cucumbers dry and avoid over-dressing the salad.
