Ingredients You’ll Need

  • Eggs – The star of the show! Use whatever large eggs you like finest.
  • Feta Cheese – We recommend sticking with full-fat crumbled feta for the finest taste and texture.
  • Pita Bread – We love to use either white or whole-wheat from-scratch pita bread, but store-bought versions work well, too.
  • Hummus – Again, we pretty much always have a batch of from-scratch hummus on hand. However, if you want to save time, just pick up your go-to from your local grocery store!
  • Za’atar – A unique Middle Eastern spice blend, za’atar is savory with just a hint of heat, adding bold flavor to the eggs.
  • Red Pepper Flakes – Use as little or as much as you like.
  • Oil – We prefer to use extra virgin olive oil, but avocado oil works well, too to fry the eggs.

Tips and Tricks

Although these crackly fried eggs are incredibly simple, we have a few extra tips to ensure they always turn out great.

  • Use high-quality cheese. Because there are so few ingredients, it’s important to use quality cheese for the richest, creamiest taste and texture. Trust us. You can taste the difference!
  • Avoid burning the cheese. Make sure you use a non-stick pan. The cheese and eggs will cling to stainless steel. Sauté the ingredients over medium heat, and keep a close eye on them! You want to remove the eggs as soon as they’re set. Otherwise, they’ll burn and stick to the pan.
  • Don’t forget the lid! Covering the eggs helps cook them quickly and more evenly.

Storage and Reheating Options

These feta fried eggs are finest enjoyed right away while they’re still hot and crisp! Once they’ve cooled, they tend to become a bit soggy, and the eggs are simple to overcook when heating them up again.

  • To Store: Transfer leftovers to an airtight container, and store them in the fridge for two to three days. We don’t recommend freezing this recipe!
  • To Eat: Enjoy the eggs cold. Or warm them in a skillet over low heat.

Common Questions About Feta Fried Eggs

What kind of feta should I use?

Use a block of feta and crumble it yourself for the finest texture—it melts and crisps better than pre-crumbled. Greek-style feta in brine is your finest bet for bold, tangy flavor.

Can I make more than one at a time?

Yes! Just make sure your pan is big enough and space the cheese piles apart so the eggs don’t run together.

How do I keep the egg from sliding off the cheese?

Sprinkle the feta in a rough circle and make a little well in the middle. Crack the egg right into the center—it’ll settle into the cheesy ring and stay put as it cooks.

Can I make it spicy?

Totally! Add more red pepper flakes, harissa, or a drizzle of hot honey for a spicy-sweet combo. You can even mix chili oil into the feta.
