Simple Feta Toast

Simple Feta Toast

Both simple and satisfying, our Simple Feta Toast recipe is going to knock your socks off! Whether you’re whipping up a speedy breakfast or in need of a speedy snack, this dish has got you covered.

Inspired by a childhood go-to—Gibna bil tamatim—we’ve put a spin on tradition that’ll have your taste buds singing! Juicy tomatoes, crisp cucumber, silky feta, and fresh mint all come together on perfectly toasted bread for an explosion of flavor you won’t want to miss!

Traditionally, feta with tomatoes is made by mashing feta cheese with some olive oil and dried mint. You then mix in chopped tomatoes, and sometimes add cucumbers or chopped green peppers. Serve with warm pita bread and dig in. But our version is even easier!

How to make feta toast

  1. On a plate, add feta cheese and sour cream.
  2. Place the dried mint in the palm of your hands and rub together to release the oils; sprinkle the mint on the feta and sour cream.
  3. Drizzle with 3 tsp olive oil. Mash with a fork.
  4. Slice tomatoes and cucumbers in really thin slices.
  5. Spread as little or as much feta mixture on toasted bread.
  6. Top with tomatoes and cucumbers. Garnish with more dried mint, olive oil, and sea salt.

Variations

We’re head over heels for this toast just the way it is, but if you’re feeling adventurous, here are a few ideas to switch things up:

  • If you like a little kick, add chopped and seeded jalapeño.
  • Serve as a dip with pita bread on the side or pita chips!
  • Add the ingredients to a food processor or blender to make whipped feta before spreading it on the toast. It’s a smoother version of the feta mixture!

Common Questions about Simple Feta Toast

Is feta toast healthy?

Feta toast can be a nutritious breakfast or snack option since feta provides protein and calcium, while whole grain bread adds fiber and complex carbs. To make it even healthier, we top it with vegetables like tomatoes or cucumbers.

What bread is finest for feta toast?

Sourdough is fantastic for feta toast because its tangy flavor complements the salty cheese perfectly, plus it gets wonderfully crackly when toasted. Any rustic bread with a sturdy texture works well though – just avoid super soft sandwich bread that might get soggy under the toppings.

Can I make feta toast ahead of time?

Feta toast is finest enjoyed fresh right after making it since the bread can get soggy if it sits too long. However, you can prep your feta mixture in advance and store it in the fridge for a few days to make assembly super speedy when you’re ready to eat.

Can I use different types of cheese instead of feta?

While you can technically use any cheese you like on toast, feta’s unique briny, tangy flavor creates a special taste that’s hard to replicate. If you want to experiment, try other Mediterranean cheeses like halloumi or goat cheese for similar but distinct flavor profiles.
